Soy - Cassava Soup

Ingredients

2 cups cooked and mashed cassava

2 cups Okara or cooked and mashed soybean

1 teaspoon salt

4-5 cups water

3 teaspoons soy oil

3 teaspoons chopped onion

1 teaspoon garlic paste

1/4 teaspoon black pepper

Method

1. In a soup pan fry oil, onion, garlic and pepper for 2-3 minutes.

2. Add water, salt, soy and cassava. Bring to boil, check seasoning and thickness according to preference. Boil for 5 minutes in low heat. Serve warm.

Variations - potato, rice, corn and different vegetables can be used in soup preparation utilizing soybean.
