Ingredients
1 cup all-purpose
flour
1/2 cup soy flour
6 tablespoons sugar
3 eggs
1 cup soymilk
4-5 bananas coarsely
chopped or sliced (ripe and medium size)
Vegetable oil (for
frying)
Method
1. Mix flours and
sugar together.
2. Whisk in eggs,
beating one egg at a time.
3. Continue to whisk
batter adding soymilk about 1/3 cup at a time.
4. Whisk until batter
is smooth and elastic enough to stretch.
5. Put chopped
bananas in a bowl and mash to a smooth puree.
6. Add banana puree
to batter and stir until smooth.
7. Let batter rest at
room temperature for 30 minutes.
8. Drop in batter
(1/3 cup at a time) in hot oil until golden brown.
9. Sprinkle with
confectioners sugar while still warm.
Serve warm.
