Okra Soy Relish

Ingredients

2 cups chopped okra

2 medium size squash (cut into small pieces)

3 tomatoes (medium size)

1 chopped onion

2 chopped green pepper

1 cup Okara or residue

4 teaspoons soy oil

1/2 teaspoon salt

spices as desired

Method

1. In a saucepan, heat oil and fry onion.

2. Add tomatoes and green pepper and squash. Mix well.

3. Add okra and simmer for 5-6 minutes.

4. Add soy, salt and desired spices.

5. Simmer for 5 minutes.

Serve hot with nshima or cooked rice.
