Refried Soybeans (Tutu)

Ingredients

5 cups soft cooked soybean

1/2 cup chopped onion

1/2 cup chopped tomatoes

1 teaspoon garlic paste

2-3 cups water

1 teaspoon salt

1 chopped green bell pepper (optional)

1/2 teaspoon black pepper

cassava flour (approximately 1 cup)

1/3 cup green onion (chopped)

3 tablespoons chopped parsley

2 hard cooked eggs (optional)

stir fry collard leaves (optional)

1/3 cup soy oil

Method

1. Heat oil.

2. Add onion, tomatoes, black pepper, green pepper, garlic paste, salt.

3. Add soybeans, mash as much as possible. Add water and let boil.

4. Add cassava flour (little at a time), stirring frequently.

5. Check seasoning.

6. Put the mixture in a serving dish. Decorate with collard leaves and boiled eggs.
