Tomato - Soy Relish

Ingredients

1 cup whole soybean

1 medium size onion (chopped)

4 medium size tomatoes (chopped)

2 tablespoons soy oil

1/2 teaspoon salt

spice as desired

Method

1. Drop the soybean into boiling water and cook for 60 minutes.

2. Heat oil and fry onion.

3. Add tomatoes. Simmer until good paste is obtained.

4. Add salt and spices to taste.

5. Grind coarsely cooked soybean or mash.

6. Mix the paste with soybean. Stir well. Keep warm and serve with nshima.
